The Breed

Akaushi Wagyu, or Red Wagyu, is a Bos Taurus breed originating from Kumamoto, Japan more than 100 years ago. Akaushi translates as “red cow” and is known in Japan as the Emperor’s Breed. Akaushi is one of only four indigenous Japanese Wagyu breeds.

THE BEEF

The Akaushi Wagyu breed produces signature marbled beef on a purely grass-fed diet.  The beef contains high amounts of intramuscular fat (which creates marbling), with a fatty acid composition that is lower in saturated fat and cholesterol and higher in monounsaturated fat and Conjugated Linoleic Acid (CLA), an essential fatty acid for human nutrition.

OUR Process

At Domenica Farms, where we source most of our Akaushi beef, we practice holistic and transparent farming and animal husbandry methods. We also provide traceability with each animal from birth to harvest to ensure the Akaushi heritage.
